Recipe of the Month.

Simple Applesauce

Ingredients

20 Hirsch's Cortland Apples
1 C Hirsch's Cider
1/4 C Sugar (or to taste)
1 t Salt
cinnamon (opt)

Directions

Peel and core apples and slice into uniform pieces. I usually use an apple-peeler-corer gadget! Place in large pot with lid. Add cider and bring to boil. Turn heat to LOW (or it will burn) and cook with lid on for 10 minutes. Stir. Continue to cook in 10 minute increments (lid on and stir) until most of apples have cooked down. Then I usually just turn off the heat and let it sit with the lid on for a little while (steaming it.) Add sugar and salt while still warm so it dissolves and cinnamon if so desired. Taste it to see if it has enough of what you want! Now I just throw it (ok, really spoon it) into 4C sized plastic containers, put a lid on it and freeze it! Save room for expansion. It's that easy:) This makes a somewhat "chunky" sauce. If you like yours "baby food smooth" you would run it through a blender/food processor or a Foley food mill. Enjoy:)
